BONILLE: DISTINCTIVE CHARACTERISTICS
Our wine
The current production of the Marco Calosi Agricultural Company is niche, with around 10 hectolitres of IGP Rosso Toscano wine produced per year.
In an effort to make these wines increasingly unique and tied to the territory, the Bonille production is divided into three types of wine: an IGP Red label, an IGP RISERVA Blue label and an IGP White Yellow label.
The BONILLE Red label is a red wine that undergoes a period of aging in oak barrels and glass, and is therefore sold only after a year from the harvest of the precious fruit.
It is a fresh, pleasant wine to be consumed within a few years, distinguished by good vivacity and drinkability.
The BONILLE RISERVA Blue label undergoes a longer and more complex aging process in oak barrels and glass, and is only released after four years from the harvest.
It is a fuller-bodied and more structured wine, yet harmonious and intense, with notes of spices and tannic returns. Even after a longer aging process, it retains all its organoleptic characteristics.
The BONILLE WHITE Yellow label is made from Malvasia and Trebbiano white grapes, carefully cultivated and produced in old vineyards. The fresh and complex taste of this wine, with delicate floral and fruity notes, expresses authenticity and radiates cheerfulness.
It has a minimum alcohol content of 12.5% and is aged for at least 5 months.
WINE AND FOOD: IDEAL PAIRINGS
Bonille red wine is ideal for pairing with well-structured and complex dishes, such as red meats, all types of game, mushroom and truffle-based dishes, and can also be successfully paired with sauces.
Red Bonille is also highly suitable for pairing with well-aged cheeses, such as aged tomes, Pecorino Toscano, and more.
It is perfect for enjoying in good company or during a relaxing moment of contemplation.
When served in large red wine glasses, its full aroma can be appreciated.
It is recommended to serve it at a temperature of about 17–20°C.
Bonille White is a gastronomic wine that accompanies dishes without overpowering them. Perfect with fish and vegetarian dishes, light appetisers and convivial moments, it also pairs very well with fresh and creamy cheeses. It can also be served as an aperitif.
The recommended serving temperature is 10–12°C.
