THE TERRITORY

The vineyards from which the precious fruit of Bonille wine is derived are located in the splendid area of Greve in Chianti, an ideal territory for wine production.


The land where the vineyards are planted is mainly composed of tuff, a volcanic sandstone rock that is very friable and imparts the aromas of violets and iris to the Sangiovese grapes.


The vineyards are surrounded by small forests of large oaks, broom plants, and a wide variety of flowers, which enhance and elevate the aromas found in the wine.

The vineyards are surrounded by small forests of large oaks, broom plants, and a wide variety of flowers, which enhance and elevate the aromas found in the wine.

OUR VINEYARDS

Initially, when the vineyard was established, the recipe of Baron Ricasoli was followed, a blend of grapes that included at least 80% Sangiovese, 20% Colorino, Canaiolo, Malvasia, and Trebbiano.

In the case of the new plantings, only Sangiovese was adopted, with small variations to increase the wine’s freshness.

The vine training system used is the traditional Tuscan Arch and Spurred Cordon.

The vineyard today is very well-maintained: the cultivation is based on respect for the environment, the natural cycles of the seasons, and the plants, which constitute our true heritage.

Our size allows us to work according to the principles of natural agriculture: targeted pruning, mowing of weeds, minimal soil cultivation, the use of strictly natural products for treatments (no herbicides or chemical pesticides), and the use of manure from carefully chosen sheepfolds in the surrounding areas for plant fertilization.

The care and great respect we dedicate to nature and its cycles allow us to forgo certifications such as organic or biodynamic, etc.

Organoleptic characteristics of Bonille

Bonille is a ruby red wine with good floral notes of iris and the flavours of red fruits, such as berries. Additionally, tasting Bonille reveals good tannins that, with time (after aging), become soft and velvety.
